Quinoa (pronounced KEEN-wah) - What is it?

Quinoa (pronounced KEEN-wah) – is commonly known as an ancient grain, but isn’t a grain at all, it’s a seed.  Quinoa is a great wheat-free alternative to starchy grains, is full of fiber and is naturally gluten free. It's packed with minerals, including iron, phosphorous, manganese and copper.  Health benefits include cancer prevention, lowering cholesterol levels, controlling blood glucose, and keep you feeling full long after eating.  For a quick and tasty weeknight meal, check out this recipe for Chicken, Tomatoes, and Quinoa you can make in your Insta Pot/Pressure Cooker.  Click here to learn more.

Chicken, Tomatoes and Quinoa

  • 1.5 lb boneless skinless chicken thighs See notes for chicken breasts
  • 1 cup uncooked quinoa, rinsed
  • 2 cloves garlic minced
  • 2 14.5 oz cans diced tomatoes w/ basil, garlic, oregano
  • 1/4 cup balsamic vinegar
  • 2 cups fresh spinach
  1. Add rinsed quinoa and garlic to the instant pot
  2. Add one can of diced tomatoes with juices, plus one can of drained diced tomatoes and balsamic vinegar
  3. Add a pinch of salt and stir together.
  4. Nestle chicken thighs into the liquid.
  5. Lock lid, be sure the vent is in the in the "sealed" position. Press manual, cook for 6 minutes on high pressure.
  6. Once the timer goes off, quick release the pressure and gently take off the lid, being careful of steam.
  7. Gently remove the chicken thighs, they'll be very tender.
  8. Stir in fresh spinach until wilted.
  9. Serve quinoa and chicken with Parmesan cheese.
